These colorful, open-faced mini cookie sandwiches not only look good and taste good, they’re “feel good” with all organic ingredients and Neufchâtel (a.k.a. low-fat cream cheese). Spot on for an Earth Month party, kids can help make them or just enjoy eating them!
Serves 25
8 ounces organic strawberries, hulled and chopped, divided
1 (8-ounce) package 365
Everyday Value® Organic Neufchâtel Cheese, softened
1 (8-ounce) package 365 Everyday Value® Organic Oatmeal Cookies
Place half of the chopped straw- berries in a large bowl. Using a fork, mash berries until crushed. Add Neufchâtel and stir until well com- bined. Spread some of the mixture on each cookie and top each with
a piece of the remaining chopped berries.
